Crockpot Broccoli Cheddar Potato Soup
Broccoli Cheddar and Potato soup is the perfect choice for a cozy, delicious, and nutritious meal! This recipe contains just a few simple ingredients: broccoli, potatoes, cheddar cheese, onion, and garlic. It’s super easy!
Ingredients You Need:
- 8 medium potatoes (peeled and diced)
- 4-6 cups of broccoli florets
- 2 medium onions, chopped
- 6 cloves garlic, minced
- 6-8 cups low-sodium chicken or vegetable broth
- 2 cup heavy cream
- 4 cups shredded sharp cheddar cheese
- 4 tablespoons all-purpose flour (to thicken/optional)
- 4 tablespoon butter (optional)
How to cook it:
- Cut up potatoes, broccoli, onion, minced garlic, and broth
- Add to crock pot on high for 3-4 hours or low for 6-8 hours
- Once broccoli florets and potatoes are tender add heavy cream and stir the cheese in until melted
- Add flour to heavy cream before inserting into crock pot (to thicken/ optional)
- Enjoy! Add a little bit of shredded cheese on top (optional)
